油赞子其实就是普通话里的“麻花”,老底子的宁波人对这一口现炸的油赞子却是情有独钟。南塘老街的小吃店开放后,“南塘油赞子”店门口常年排着长蛇队,几乎是风雨无阻。店家很牛气地限购20元,食客仍趋之若鹜。

Old Ningbo people show special preference to fried dough twists.After the snack bar was opened in the old Nantang Street, long lines form before the "Nantang Fried Dough Twist" store throughout the year, regardless of the weather. The storekeeper limits the purchase to 20 yuan arrogantly.

买油赞子的时候时常能见到店里一群妇人围着长长的矮几,手指翻飞,将切好的面团搓细,迅速一抹一搓,再对折成四股麻绳状,即成长短均匀的生坯。负责炸坯的伙计要在油锅前站足9分钟,才能炸出一锅。稍稍一晾,便被食客们一抢而光,下一批面坯又马不停蹄地下锅。

A group of women in the store can often be seen around a long low table to prepare semi-finished dough twists proficiently. The man responsible for frying the twists has to stand in front of the pot for nine minutes before a pot of twists have been fried. After the twists cool slightly, they are sold out immediately.

溪口的美食名片就是千层饼,它四四方方,小巧精致的一块儿,里面却是层层叠叠地分了27层。做千层饼是一件既需用心,又需要经验的活计。想要做出薄脆的千层饼,要选用本地产的小麦磨粉,海苔粉要用本地的东海冬苔更为鲜香,擀皮全凭手上的巧劲儿,需要很高的技术含量。看似简单,实则是长年累月的经验。

The famous food in Xikou is layered cakes, which are square and delicate, with 27 layers inside. Making layered cakes is the manual labour that needs much care and experience. To make crisp layered cakes, local wheat should be used and ground into powder. Nori powder should be the winter nori growing in the East China Sea, fresher and more fragrant. Rolling the pastry depends on the knack of the hands; it seems simple, but requires many years of experience.

仓桥面结面的名气,在宁波谁人不知,谁人不晓。不知情况的人路过这里,一定会惊异排队的人群,这家又小又破的店面怎么会得到那么多人的垂青,是施了什么妖法吗?老宁波笑道,哪是妖法,这可是地道的宁波滋味!

Everyone in Ningbo knows the fame of Cangqiao noodles. Outsiders will be amazed at the long lines of people in front of the shop, and old Ningbo people will tell you this is the authentic taste of Ningbo!

面店里的几位阿姨据说是国营豆腐店倒闭后出来的一批,做面结有一手,多年下来,积攒了良好的口碑,顾客络绎不绝。在这物价高飞的时候,仓桥面结面的价格实在太良心,物美价廉让吃客们钟情于此,每天排队都要来解解嘴瘾,感情啊就是这么吃出来的。

It is said that several aunts of the shop were employed by the shop after the collapse of the state-owned tofu store. They are skilled at making the noodles, having a good reputation over many years. Customers are in an endless stream. Although prices are soaring, Cangqiao noodles are so inexpensive that diners are flowing continuously.

徐霞客从宁海出发,和友人想出了用麦粉搓糯,再用面杖做成薄薄的皮,放到铁锅中翻热后吃,带上路十天半月也不坏的麦饼。此后,宁海麦饼便称之为“霞客麦饼”,民间也称“上路麦饼”。食用麦饼已成为宁海风俗,每年夏天麦收后,家家贴麦饼当中饭,剩下的做“接力”,吃了去田畈劳动;麦饼香诱得人既解肚饥,又风味尽享。到了如今,麦饼品种、花色很多,风味各异,但是无论口味如何,宁海麦饼嚼在口中,都是浓得化不开的乡情。

Starting from Ninghai, Xu Xiake and his friends came up with an idea of rolling wheat flour into thin pastries and frying them in an iron pot. The wheat cakes would not go bad in ten to fifteen days during the journey. Thereafter, Ninghai wheat cakes were called "Xiake wheat cakes”, also known as "journey wheat cakes" among the people. Eating wheat cakes has become a custom in Ninghai. After the wheat harvest each summer, every family makes wheat cakes as their lunch, and then goes to the field to labour. Wheat cakes are fragrant and can satisfy a person’s hunger. Up to now, there have been many varieties and flavours of wheat cakes, but regardless of taste, Ninghai wheat cakes show a strong affection for the hometown.

有不地道的叫法称之奉化牛肉面,其实应该是牛肉干面,这“面”专业一点说是番薯粉丝,方言称之为“干面”。这一道鲜味十足的干面,一定会让你胃口大开。汤头经过长时间的熬煮散发出诱人的香气,恰当好处的新鲜青菜叶点缀在盘中,牛肉更是最具吸引力的美味。倘若你尝试了这一碗面,这个鲜美的滋味就会在心里生根发芽,尤其是在饥肠辘辘馋虫出没之时,好想再一饱口福,犒劳下自己的胃。风卷残云,一碗落肚,踏实与满足感接连袭来,这种味道怎能不上瘾?

100多年前,有一个叫陆埠镇的地方开了一家叫做“乾丰”的南货茶食店,那里有一位宁波师傅试做成了豆酥糖,从此成为许多宁波人尤其是孩子们爱极了的零嘴。

One hundred years ago, a grocery named “Qianfeng”was opened in Lubu Town, and a master of the store from Ningbo made crunchy candies with beans successfully. Therefrom, the candies have been favourite snacks of Ningbo people, especially the children.

三北豆酥糖有名的最高境界便是“手拿不碎、入口即化、嚼之不粘牙、无渣”。选料考究和精工细作是它美味的保证。印着“三北豆酥糖”几个红字的白色糖纸有如民国旧物一般的朴拙意味,将糖块裹得四方棱角分明,厚薄均匀,底封不用浆糊,免得豆酥糖发潮。这样,就能长久保持香、甜、酥、松,有浓烈的黄豆香,且老小咸宜,便是没牙的老祖母也可怡然享用。

The "Sanbei crunchy candies with beans are famous". The highest state is that they “are not broken if held in hands, melt in the mouth, and do not stick to teeth if chewed, without residues". Choice of ingredients and fine workmanship are a guarantee of the delicious taste. The white wrappers printed with the red words of "Sanbei Crunchy Candies With Beans”are as simple as old things in the Republic of China, wrapping the candies squarely and uniformly, without glue for bottom sealing. Thus, the candies are protected against dampness and can be kept fragrant, sweet, crisp and loose for a long time, suitable for all ages.

豆制品,人人吃过,天南海北到处都有,可就是前童的豆制品成了宝贝。所谓“前童三宝”分别是老豆腐、香干、空心腐(近似油豆腐)。前童地处白溪和梁皇溪交汇处,四周群山适宜种黄豆,出产的六月豆个头小,用来做豆腐特别好。做豆制品水来自浙东大峡谷、一级水质,又经过地下过滤,清澈鲜甜。制作豆腐的工艺据说源于1400年,出自民间,传至皇宫。好豆、好水、好工艺,怪不得前童三宝名扬四海。

Bean products in Qiantong have become a treasure. The so-called "three Qiantong treasures" are the processed bean curd, smoked bean curd, and hollow bean curd (similar to fried bean curd). At the confluence of the Bai Brook and the Lianghuang Brook, Qiantong is surrounded by mountains, suitable for growing soya beans. The soya beans produced in June are small, especially good for making bean curd. The water for making the bean curd comes from the grand canyon in eastern Zhejiang, having the first-grade quality. Moreover, the water is clear and sweet after underground filtration. Reportedly, the technology of making the bean curd originated from among the people in 1400 and was spread to the palace. Good beans, high-quality water and superior technology make the three Qiantong treasures famous all over the world.

畅游海滨浴场的休闲消暑,品味石浦老街的渔港岁月,记忆最深的,当数鲜美无比的象山海鲜面。海鲜面据说位列象山十大特色小吃之首,可见其美味在当地有口皆碑。正宗象山海鲜面的正确吃法十分洋气,是半自助式的——“自由搭配”,点上一份十几元的海鲜面,里面可以自由地选取若干种海鲜,无骨鱼、花蛤、小白鲳鱼、小黄鱼、蛏子、大虾、鲍鱼仔等。所有的海鲜浇头都是用最简单的方式来烹制,将所有的鲜味都保留了下来。大碗盛上来,只见厚厚一层细米面铺上满满的海味,一顿猛吃豪嚼,鲜得下巴也要掉下来。

The delicious Xiangshan seafood noodles are the most memorable in case of having leisure and taking a summer vacation in a seaside resort. It is said that Xiangshan seafood noodles rank first in ten special snacks, indicating its local reputation. The correct way of eating Xiangshan seafood noodles is like a semi-buffet in the Western style. When you order a bowl of seafood noodles at the cost of more than ten yuan, you can add several kinds of seafood, such as boneless fish, clams, little white pomfret, little yellow croakers, razor clams, prawns, baby abalones etc. All the seafood toppings are cooked by using the easiest method, and all the delicate flavours are retained. A thick layer of fine rice-flour noodles are covered with full seafood, and you will make a clean sweep of the noodles.
